Slow Cooker Broccoli Potato Soup

I love soup! It’s cheap, easy to make, and nutritious too. If you puree the soup it will seem very creamy. This is from the potato, it’s a great trick. You can also mix in some sour cream to make it a rich treat, just use low fat. I don’t use fat free because they usually add more filler ingredients.

Slow Cooker Broccoli Potato Soup

  • 1 bag frozen broccoli (or 1 fresh head trimmed and chopped)
  • 3 large potatoes or 6 - 8 smallish ones, cubed
  • 1 onion, minced
  • 3 cloves garlic, minced
  • 4 cups filtered water
  • 1 Tb. each Fresh rosemary and thyme chopped (use only 1 teaspoons if dried!)
  • Salt and pepper to taste
  • Chives for garnish
  • Low fat sour cream, low fat shredded cheese, Bac-o’s Bacon Flavor Bits (optional)

Combine first six ingredients into a slow cooker, and cook on low 6 - 10 hours. Puree with an immersion blender or in a regular blender. If using a regular blender, make sure to do it in small batches. Being sprayed with hot soup is never a fun thing! Add more water if the soup is too thick for you.

Serve topped with chives, sour cream, and shredded cheese. Add Bac-o’s Bacon Flavor Bits if you want - they are vegan so they are not as bad as you think. Or you could add a couple of drops of liquid smoke to the soup pot to get the same flavor for no additional calories!

Slow Cooker Winter Squash Soup

Having a soup everyday is a great way to eat more veggies. You can also save some calories by eating soup instead of a heavy appetizer with your meal.

An easy way to do this is to make your soups in the slow cooker. You don’t have to slave over the stove all day to get an amazing soup and by using a slow cooker you don’t need to add oil!

Slow Cooker Winter Squash Soup

  • 1 medium squash (butternut, acorn, delicata, or other winter squash)
    peeled, seeded,  and cut into chunks
  • 1 small onion, minced
  • 2 cloves garlic, minced
  • 2 small apples (or pears), peeled and cut into chunks (optional)
  • 1/2 cups mushrooms, chopped
  • Fresh rosemary, thyme, and sage, minced
  • 4 cups filtered water or vegetable broth

Toss everything into a slow cooker and cook on low 6 - 10 hours. You can use an immersion blender if you want a smooth soup, or eat it as is for a chunky one.

The way I like to do it is to start the soup before I leave from work in the morning. Then when I come home dinner is ready, and the house smells great too!

Another flu vaccine benefit: baby lovin’

We’ve talked about flu vaccines, seasonal tips, and the mother of all anti-flu shots, but what about a population that isn’t supposed to get flu shots?

Babies under 6 months of age are not recommended to receive the vaccine, but a new study published in the New England Journal of Medicine has shined light on a nice loophole: get yourself vaccinated while your pregnant.

Inactivated influenza vaccine reduced proven influenza illness by 63% in infants up to 6 months of age and averted approximately a third of all febrile respiratory illnesses in mothers and young infants.

Shine On

I recently attended a workshop entitled “Understanding Men” (don’t laugh) and I’d like to share a piece of information with you.

The instructors in the workshop broke down the fundamentals of attraction, both physical and mental. The number 4 physical attribute a man finds most attractive is: Shiny Hair. Yes, shiny hair. Forget the large breasts, full lips, thin thighs and tight booty– men like a full head of hair that gleams in the light. Below are a few ways you can acheive that healthy shine and make the men in your life putty in your hands.

Diet: No, not as in cutting calories, but eat more foods rich in Omega 3’s. Foods like salmon, avocado, flaxseed, nuts and almonds contain a high amount of these omega’s that contribute to that shine.

Clarity: The products you use on a daily basis like gel, hairspray or mousse can cause buildup in your hair which takes away the shine. Use a clarifying shampoo once or twice a week.

Condition: Dry, brittle hair does not shine. Make sure you condition every time you wash– if you feel the conditioner weighs your hair down, only condition the bottom half–hold your hair like you’re putting in it a ponytail, and just condition that bottom half.

Drying: Hair is sensitive when wet. When you towel dry your hair, squeeze out the excess water and blot dry. Do not rub! Your hairs will break and you will damage the cuticle.

Products: Try a shine spray. Many different product lines carry them. Just like with conditioner, only use on the lower half of your hair to avoid making it greasy or weighing it down.

Lizard Spit: MmmMmm Good

Ever heard of Byetta?

Probably not. This drug, from Gila monster spit, is a relatively new medicine used primarily to treat non-insulin dependent Type II diabetes and is still fairly unknown.

But that could change.

I have personally used this drug for a related medical condition, as so-called ‘off label’ use. Unfortunately, insurance companies are still fairly strict on such off-label use and I couldn’t continue after my sample ran out. (At $200/month to purchase it was far too pricey.)

But even in the short 6 weeks I was on it, I saw huge weight loss benefits. And crowds are taking notice.

There’s a growing interest in marketing this as a weight loss drug. It’s not for the faint of heart. It’s nauseating to adjust to, requires twice daily injections, is expensive, and does have risks.

But it’s also amazing. It worked wonderfully for me and I was sad to stop taking it. You may hear more about it soon. Lizard spit never looked so good!
